Ingredients

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons gluten-free soy sauce (tamari)

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 bell pepper, thinly sliced

1 medium carrot, julienned

1 cup broccoli florets

1 small onion, thinly sliced

2 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons gluten-free oyster sauce

1 tablespoon rice vinegar

1/4 cup chicken broth

1 teaspoon sugar

2 green onions, chopped

Sesame seeds, for garnish (optional)

Cooked rice or gluten-free noodles, for serving

Cooking Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken strips, gluten-free soy sauce, and cornstarch. Mix well and let it marinate for 15-20 minutes.
  2. Prepare the Sauce: In a small bowl, whisk together the gluten-free oyster sauce, rice vinegar, chicken broth, and sugar. Set aside.
  3. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic, ginger, and sliced onions. Stir-fry for about 30 seconds until fragrant. Add the bell pepper, carrot, and broccoli florets. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Combine and Serve: Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly and cook for an additional 2-3 minutes until heated through.
  6. Garnish and Serve: Sprinkle the chopped green onions and sesame seeds (if using) over the stir-fry. Serve hot over cooked rice or gluten-free noodles.
