Spaghetti Carbonara

Ingredients
Spaghetti (200g)
2 large eggs
1 cup grated Parmesan cheese
4 oz pancetta, diced
2 cloves garlic, minced
Salt and black pepper
Fresh parsley (optional)
Cooking Instructions
Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
In a bowl, whisk together eggs and Parmesan cheese until well combined.
In a large skillet, cook pancetta over medium heat until crispy. Add minced garlic and cook for another 1-2 minutes.
Add the cooked spaghetti to the skillet, tossing to combine with pancetta and garlic.
Remove from heat and quickly pour in the egg and cheese mixture, tossing constantly to create a creamy sauce. Use reserved pasta water to reach desired consistency.
Season with salt and black pepper to taste. Garnish with fresh parsley, if desired. Serve immediately.
